Tofu pie

Squish everything together in a bowl. Oil a 9” round or 8” square cake pan. Mash the goop in there. Bake for 1/2 hour at 350 F. Serve with Buddha’s Special Sauce.

Rip off of Moosewood’s “Buddha’s Jewels.” Simplified in that there is no chopping or rolling.

2 cakes soft Ithaca Soy Tofu

1/4 C peanut butter

Soy sauce to taste (more if PB is unsalted)

1/2 tsp powdered ginger
